Looking for another great way to use leftovers, make home made Fried Rice!! It's easy peasy and quick to make.
Earlier in the week I made Bimimap one night and Herbs de Provence Roasted Chicken Thighs the night after. I had 2 thighs left and a cup of steamed white rice.

You can assemble your ingredients using any left over veggies and meat you like. I had some left over baby corn and carrots.
Here's a quick recipe I came up with:
2 Tsps Minced Garlic
Veggies (carrots, frozen peas)
2 stems of scallions - this time I forgot and it was definitely missing the scallions. You can also save a bit to garnish at the end
1 Tsbs Soy Sauce (but use it to taste) oh and don't forget you can use either the Low Sodium or regular Soy Sauce
1 Tsp Salt
1 Tsp Pepper (white or black)
2 Eggs (whisk together)
Protein of choice
2 Tbsp Butter (or Oil, you do you)
Sesame Oil to taste
Add your butter or oil to the pan and heat up the garlic and scallions, add in your veggies and then your rice and protein. Add in the Soy Sauce and salt and pepper
Mix it all up as you move it around the pan.
I like to push everything to the sides, then add a pat of butter and add in my whisked eggs and scramble/cook them as you push them out to the center to mix into the rice mixture. Mix everything up and serve. You can add a bit of Sesame Oil, salt and pepper and more scallions to taste.
